My aunt has 3 matches descended from the same ancestral couple.

When I look at E, he has a shared match to S
When I look at J, he has a shared match to S
When I look at S, she is not a shared match with either E or J

Shouldn't the shared matches apply both ways?

J and S also both have shared matches to U, where the relationship is currently unknown as his/her tree is not well developed.

Any ideas what is going on?

I have observed this too where person A will match with B and C but later I find person D who matches with A, B and C, but still doesn't not show as a match for A.

Shared matches only apply to estimated 4th cousins and closer of high confidence. I think what happens with these inconsistencies is that E and J are estimated 4th cousins/high confidence with you, and they are also 4th cousins/high confidence with S, so S will show up when looking at shared matches for E and J. But if S is either estimated more distantly to you, or at a lower confidence level then S doesn't qualify for shared matches with you, so none will show. Or something like that.
