It looks more accurate than gedmatch oracles, but somehow I can not figure exactly what they mean.

This is my K15

It basically says I have North Italian, Portuguese and Spanish ancestry plus some African and Amerindian, this is not hard to understand.

What I want to understand is if these numbers correspond exactly to the percentages I have of these groups or are just models based on my DNA.

I was supposed to have more ancestry in Portugal and Spain than in Italy, but all calculators other than MyHeritage give me more North Italian for some reason.

It depends on the calculator. nMonte models ancestry based on your DNA and these are never 100 percent accurate.

However, some calculators will give certain people more accurate results than others. Others will nail the majority ancestry but miss the mark on minor ancestry, or vice versa.

The ANE calcs on yourdnaportal's nMonte is useless for my majority ancestry but surprisingly accurate for my minor ancestry. This is probably because my minor ancestry is ANE/South Asian.

Basically, no one calculator is perfect and neither is nMonte.

I wouldn't worry too much about that difference. It's probably happening because we are a little admixed.

It seems so. Probably even intra-European admixture of Portuguese/Spanish + different Italians and possibly some Jews can lead to some complicated results, when you put in around 10% non-euro as in my case then it becomes even more complicated. In the Eurogenes K15 PCA map I plot between Sicilians and Sardinians even if I don't have any known ancestry from them.
