I'll go first and start with Ethiopia. The Churches of Lalibela is probably Ethiopia's best known historical buldings, specifically Bete Giyorgis (http://en.wikipedia.org/wiki/Church_of_Saint_George,_Lalibela) (House of St. George):

Xunantunich or "The X" as tourist call it in Belize (My all-time favorite ruin. Went in January of 2009). 142 ft. high. You can see the towns of San Ignacio, Santa Elena and Benque Viejo at the top. More importantly, you can see lush, open, vastness of nature for what seem's like forever.
