my son sent me this

I am unsure how accurate this split view is

Well according to 23andme I have 0.1% South Asian which is all in my chromosome 7, which according to split view I got from my mother, yet both of her chromosome 7 are European, so go figure?

Funny thing happened when my son did the split view, ......my italian went from 24.6% to 30.6% and my German went down from 22.1% to 10.8%

My son went from Italian of 20.6% to 26.6% and his german went from 8.1% to 12.3%

all other ethnicites barely moved ( none by more than 1 % ) in percentage

Even if they are phasing the results of your son versus the kits for his mother and yourself, he still has only 50% of the auDNA of any one parent. They have less info from his kit to estimate individual parental ethnicity, than when they test his parents. In other words they are starting with a glass half empty.
