Not much; my great-great-grandfather John Sellers was born Seller but when he reached adulthood he put an s on the end. Or people constantly got the name wrong and called him 'Sellers', a common surname, so he decided to just accept it. Something similar happened in my mother's family, where two brothers came to Rhode Island; George continued to spell the name Wightman, while his brother Valentine changed it to Whitman; he was the seventh great-grandfather of my maternal grandfather, Milton Whitman.

I've seen some bizarre changes, like bowman to bowen, Vincer to Windsor (apparently, this seems dubious but everyone researching the tree keeps getting the same information). So that's a relatively simple one I guess.
